Returning to begin again. In 2014, we left Emilia-Romagna to return to Monte Sant’Angelo and bring our own project to life. We started in a small garage. Then we reclaimed abandoned land just a few steps from the pasta factory, growing some of our own organic wheat and sourcing the rest from small-scale farmers in Puglia.

Pasta begins long before it reaches the pasta factory.

It begins in the fields of the Gargano: those we cultivate ourselves and those of the small farmers in Puglia who share our care for the land and respect for its natural rhythms.

Nature sets the pace. We listen.

We work with Italian organic semolina, pure water, and mountain air. Bronze die extrusion gives the pasta its rough texture, while slow drying preserves the fragrance and firmness of the wheat.

Casa Prencipe isn’t a business we inherited. It’s the project we chose to build.

After years spent in Emilia-Romagna, first studying and then working, we felt the desire to return to Monte Sant’Angelo and create something that was truly our own.

In 2014, we started in a small garage. We then brought abandoned fields near our pasta factory back to life, growing our own organic wheat and working with small farmers across Puglia to create a local, traceable supply chain.

Pasta begins long before it reaches the pasta factory.
